Here at Honolulu Coffee Company, we value — and flourish from — our locally-owned business partners. In collaboration with Laie Vanilla Company and Hawaiian Rainbow Bees, we present our Local Latte to celebrate Lōkahi—the name of our signature house coffee blend and the Hawaiian word for “harmony, community, and oneness”.

LAIE VANILLA COMPANY

Laie Vanilla Company is O‘ahu’s ONLY vanilla farm and is committed to providing premium vanilla to various local companies and restaurants. This family-owned farm runs from the home of Saili Levi in Laie, where he spends valuable time with his daughters from building the shade house, tagging bugs, and pollinating vanilla! In the future, they’d like to expand into other products, offer tours of their farm, and start an educational program to help students grow their own vanilla.

HAWAIIAN RAINBOW BEES

Hawaiian Rainbow Bees is a family owned and operated company focused on local, unprocessed, healthy Hawaiian honey. Because Hawai‘i is the perfect location for quality honey due to its tropical flowers that bloom all year round, many hives are located on macadamia nut farms that extend into the slopes of Kilauea, Mauna Loa, and Mauna Kea on the Big Island. Currently, there are over 1,500 hives in over 25 bee apiaries across the island.

Bring out your inner barista and try out the Local Latte yourself! Follow the recipe below to get a taste of Lōkahi and Aloha at the comfort of your own home.

Ingredients

For the drink

• If you can make espresso: 2 ounces of espresso (traditional double shot)

• If you can’t make espresso: 2-3 ounces of coffee brewed very strong

• 10-12oz of your choice of milk or milk alternative

• 1.5oz Laie Vanilla Bean Syrup

• 1.5oz Macadamia Nut Honey Syrup

• (optional) Ice

For the vanilla syrup

• 16oz sugar

• 16oz fresh, filtered water

• 1 Laie vanilla bean

For the honey syrup

• Macadamia Nut Honey Syrup

• Fresh, filtered water

Directions

To Make the Macadamia Nut Honey Syrup (creates a 32oz bottle of syrup)

1. Bring 16 oz. of filtered water to boil.  Add 16 oz. macadamia nut honey. Stir until dissolved, remove from heat and let cool before storing pouring into storage container.

To Make the Laie Vanilla Bean Syrup Syrup (creates a 32oz bottle of syrup)

1. Use a knife to cut a Laie vanilla bean pod in half. Scrape out vanilla beans and add to a small saucepan. Mix together 16oz of water and 16oz of sugar. Stir to dissolve the sugar and break apart the vanilla beans. Let sit until cool the strain out the vanilla beans before pouring into a storage container.

For a hot latte

1. Add 1.5oz of macadamia nut honey syrup and 1.5oz of Laie vanilla syrup to your cup

2. Pull double shot of espresso into cup

3. Pour 12oz of steamed milk into cup to integrate

For an iced latte

1. Add 1.5oz of macadamia nut honey syrup and 1.5oz of Laie vanilla syrup to your cup

2. Place 10oz of your preferred milk into a cup (cold)

3. Pull a double shot of espresso directly into a cup, or add in a strongly brewed coffee (an Aeropress can work great for this)

4. Top off with ice to taste and stir
